Curried lentils…

In an effort to eat healthier I have set up one week of veg*an meals per week. This week on Friday we had curried lentil soup.

Curried Lentil Soup
Serves 6 heartily

2 teaspoons olive oil
1 chopped onion
1 1/4 teaspoons curry powder or paste
4 cups chicken broth (vegetarians, use veggie broth)
2 cans coconut milk
3 cups lentils (or use one package)
2 tablespoons chopped fresh basil or 2 teaspoons dried
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1 (14.5-ounce) can diced tomatoes — undrained

I sauteed the onions and cabbage (i added cabbage to the soup) and then added the rest of the ingredients…  the result was amazing.

We had it for dinner Friday night and then we had it for lunch Saturday along with some chicken soup. My inlaws came over and they mixed the soups together which was really quite tasty.

Yesterday I made oats and cheese bread and it was finished up fast. Too fast.

I will post pics later on tonight. Yum-o. 🙂
